Twice Baked Taters

 

Y'ALL. If you're counting calories turn back now, and return when its cheat day. These puppies are worth the partial heartattack. For all of you who have a case of the blues, have'nt taken off the sweatpants in days, the breakup, wanna make-up, but dont wanna put on make up kind of mood... its time to pull this recipie out.

 

I bought all the ingredients at my local HEB. However, they can be found at any grocery store.

My total cost was $13.41 and it yeilded 6 twice baked potatoes. (this was skewed because I had to buy a few ingredients that you most likely have in your fridge)

 

-Green Onions $1.36

-3 Potatoes $2.27

-HEB 3 Cheese Blend Fancy $2.50

-Brummel & Brown Butter $2.48

-Hormel Black Label Sliced Bacon $5.48

 

What I jammed to while cooking:

Ingredients:

-3 washed and blemish removed anysized potatoes

-3 stalks of fresh green onions washed, chopped, and set aside

-A bag of 3 Cheese mix nearby

-3.5 tablespoons of butter

-1 pack of cooked bacon chooped into bite size peices

-1/4 cup milk

 

Directions:

 

 

 

 

First make sure you have all of your trusty ingredients. Any brand bacon, cheese, and butter can be used. You can add sour cream or any other condiment that you like on your baked potoato. Today, we just have chives, bacon, butter, and cheese.

Next, wash the potatoes, remove any blemishes that you stumble upon, but try not to cut too deep into the potato. Poke holes in the potatoes with a fork to ensure they dont explode. I think thats what happens if you don't, right?? Then gently place your potato pan into a preheated oven at 415 degrees for 60 minutes.

While your tots are baking you can be productive and prepare your other ingredients. This is 3 whole stocks of green onions choped into small bite size rings.

Now for the part that may cause drool. Cook your entire pack of bacon on medium heat and when browned place on a papertowel lined plate to absorb extra grease.

Once your taters are done, remove them and let cool that way you dont burn your pretty hands. Once at a manageable heat cut each potato in half giving you 6 halves.

Gently scoop out the inside yummy parts of your tots into a clean bowl. Be careful when you get close to the skin of the potato that you dont rip it because you will need it for later! Set the skins aside.

Try to break apart the large pieces, this will make your job eaiser later on in the process.

Add your butter one teaspoon at a time, mixing the potatoes in between. Add a fourth of a cup of milk, or until you have a fluffy consistency.

Add in your green onions and mix mix mix.

The add the homemade bacon bits. If a few end up in your mouth and not the bowl that totally normal. Add in two handfuls of your 3 cheese blend.

Filll each skin with an even amount of your mix.

Now for the biggest secret of all.. Butter. Of course. Just a thin layer on top of the mix filled potatoes.

Add another handful of your three cheese to cover each potato, and pop them back in the oven for thier second go around. This time lower the heat to 350 degrees.

Congratulations! They're all done. Handle with caution, but eat without regret. You deserve it (:
